Avocado Chocolate Pudding
If you’re anything like me, then you know the struggle of trying to find healthy yet delicious alternatives; much less, healthy alternatives in the dessert department that actually taste good. So, I set out to create a chocolate pudding that didn’t lack in the taste department, but also didn’t blow it off the charts as far as macros are concerned.
Avocados paint a bad macro picture, but don’t count them out!
Keep in mind that avocados paint a picture of being very macro un-friendly, but they are actually SO good for you. Here’s the low down on all of the amazing healthy benefits of avocados. Did I mention that this recipe is loaded with protein? Just one serving packs in a whopping 54 grams of protein! It’s also very filling with 32 grams of fat (good fat!) and 26 grams of carbs (again, good carbs!), it’s the perfect snack to hold you over for quite a while!
Voila! Let me introduce you to my avocado chocolate pudding! I should preface this by saying yes, I was very skeptical about using an avocado in a pudding recipe. Don’t get me wrong, I love avocados just as much as the next basic girl, but in a pudding, yeah I was a little concerned. However, the avocado gave the pudding the most amazing silky, smooth texture, and the chocolate totally masked the avocado taste.
Hello, easiest recipe ever!
The best part about this recipe is how easy it is! I used my Nutribullet (I use it for just about everything these days), but you can absolutely use a food processor or hand mixer if that’s more your speed. How easy is this recipe? You literally dump all of the ingredients in and press go. Revolutionary, my friends. It also only calls for four ingredients, and in my book, that’s incredible!
The recipe below makes enough for two servings (one for me and one for Mac), but you can absolutely alter it to your desired amount. Just keep this in mind: 2 scoops of chocolate protein powder for every avocado added. If you don’t use that ratio, you will be able to taste the avocado, and nobody wants avocado pudding. Well, maybe I’m wrong about that, but I definitely don’t want avocado tasting pudding.
